Tablet (Taiblet)
We define it as; a medium-hard, sugary confectionary from Scotland, slightly grainy but not gritty. It should have a bite (not quite a snap) then it fills your mouth with a sugar sweet taste, it's not smooth like fudge but has a texture that leaves a sweet coating in the mouth after eating.
Whilst we can't be sure when tablet was first invented or produced in Scotland, evidence does suggest it goes back to at least the early 1700s in "The Household Book of Lady Grisell Baillie, where the traditional recipe just used sugar and cream.
The Star Rock Shop has its own recipe, handed down through generations and owners, a more traditional recipe that produces a brown sugary firm texture that disolves in the mouth.

No matter how many tablet batches you make, there is no predicting the colour or exact thickness, therefore as long as we cook by hand with love, every batch may vary in natural golden colour and thickness.
All handmade Star Rock products should be treated as fresh goods with a short shelf life, and kept in a cool dry position. Once opened, keep cool or in the fridge and eat within 7 days of opening.
